Quick Tortilla Casserole


3/4 pound ground beef
1 medium onion, chopped
1 bell pepper, any color, chopped
1-2 tsp. chili powder, optional
1 1/4 c. salsa
2 c. frozen corn, thawed
3 (8 inch) whole wheat tortillas
1/2 c. sour cream
2 c. shredded cheddar cheese
about 1/4 c. chopped cilantro, optional
about 1/4 c. chopped green onions, optional

Brown meat with onions and peppers in large skillet. Drain grease. Stir in chili powder, cook for 1 minute longer. Add salsa and corn; mix well. Simmer 5 minutes. Spread 1 c. meat sauce onto bottom of 8 x 8 inch pan; top with layers of 1 tortilla, about 1/2 c. meat sauce, sour cream and about 1/2 c. cheese. cover with 1 tortilla, about 1 c. remaining meat sauce, about 1/2 c. cheese; top with remaining tortilla and meat sauce. Cover with foil. Bake 25 minutes or until casserole is heated through. Top with remaining cheese and cilantro and green onions, if desired.

Diane - We had this casserole for dinner tonight. It is so good! I used some frozen sweet corn. And, I also had some salsa and taco sauce to use up, so I used 1/2 and 1/2 - it worked well. The cilantro and green onions on top are the perfect finishing touch. This recipe is a definite keeper! -- Karen Davis
